For the “Love” of Food

I would definitely say that I am a full fledged foodie at heart, always have and always will be. I remember 4 years ago, when I started having health issues, I thought I could never go without gluten, sugar and dairy! It’s crazy how hard it is to have to limit myself, everyone just wants what they want when they want it. I’ve been reading the book of Acts and I look at all of the pain and suffering that Paul endured to spread the good news “that the Messiah would suffer and, as the first to rise from the dead, would proclaim light to his own people and to the Gentiles.” Acts 26:23. Paul had one care and it was to share all that God had done, by sending his only son so we could be saved. His pain and suffering is more than I could ever imagine and definitely makes me realize that my health issues are very trivial in terms of Paul’s life and the pain Jesus endured on the cross so we could be saved.

Having said that I still had to find a healthy way to eliminate these foods from my diet and make it a lifestyle where I did not feel I was missing out all the time. I believe God uses these things in our lives to show us that through him all things are possible and through Christ who strengthens us we can do all things!!

So I quickly developed a passion for taking my favorite foods and making them fit into my new lifestyle. Every week my husband and I find new recipes to try. He is the master chef and I alter the ingredients to make them healthy for our whole family!

I’m going to start with one of my favorite foods, homemade chocolate chip cookies, in particular the “Tollhouse Recipe” on the bag!! I think we finally nailed it this past weekend. Believe it or not we only substituted 3 ingredients, sugar, white flour and chocolate chips with honey, spelt flour and “Enjoy Life” Chocolate Chips.

I tested them out at our Bible Study this past weekend and everyone including the kids kept coming back for seconds. Check out the pictures below and the recipe! Healthy Chocolate Chip Cookies
2 1/4 cups of Spelt Flour
1 teaspoon of baking soda
1 teaspoon of sea salt
1 cup of honey
2 sticks of organic butter
1 teaspoon of vanilla extract
2 large eggs
1 bag of “Enjoy Life Chocolate Chips”
1 cup walnuts


Pre-heat oven to 325 degrees. Since you are baking with honey it browns the cookies faster so you have to lower the temperature.

Combine all dry ingredients in a bowl. Cream butter, vanilla and honey in a mixer until well creamed. Then add 1 egg at a time to the mixer. Then gradually combine flour mixture. Stir in the chocolate chips and nuts. Refrigerate batter for 30 minutes.

Drop by rounded tablespoons into ungreased baking sheet about 1/2 inch apart. Bake for 10-15 minutes or until golden brown. Cool on baking sheet for 2 minutes, move to wire rack to cool completely!
