God’s Comfort Food


With every year that passes the Winters seem to get colder and colder, or maybe I’m just getting older and older!! These cold and bitter temperatures can also be a trap for me to constantly crave “Comfort Foods” and of course wanting to hibernate at 4:50am when my alarm goes off for the gym!

Two things I’ve learned throughout this Winter:

1. You need a group of FRIENDs or a cousin named Shannon to motivate you to get out of bed in the morning to workout!

I can’t tell you how many times I would have gone back to bed this winter when it was -5 below, if it was not for the amazing group of women braving the same cold temperatures waiting for me at the gym.

2. First and foremost true comfort and grace can only be found when you seek and ask God to fill you with his Holy Spirit!

Yes “Comfort Food” tastes good while you are eating it, but that euphoric feeling is only temporary. True lasting comfort, joy and peace come from God’s complete filling of his Spirit in you!!

“But the fruit of the Spirit is love, joy, peace, patience, kindness, goodness, faithfulness, gentleness and self-control. Those who belong to Christ Jesus have crucified the sinful nature with it’s passions and desires. Since we live by the Spirit, let us keep in step with the Spirit.” Galatians 5: 22-26

Spring and warm weather are right around the corner! I pray for the comfort and filling of the Holy Spirit who can joyfully get me through the next couple of weeks of cold weather! I know when I walk in step with my creator I crave the healthy foods and desire to get to the gym all for His glory!

“May our Lord Jesus Christ himself and God our Father, who loved us and by his grace gave us eternal encouragement and good hope, encourage your hearts and strengthen you in every good deed and word.” 2 Thessalonians 2:16-17

Next time you are craving some good old fashioned “Comfort Food” try this clean healthy version of “Shepherd’s Pie.” My whole family loved this so much that it was gone before I could take a picture!!

Love your Body!

How about we try something new this week.  Love your body!  No one is perfect we all have strengths and weaknesses but don’t try and eat good and exercise because you hate your body.  Do it because you can and because you want to learn to love the vessel you have been given to get through this life!

I challenge you to just love your body this week with two simple tricks.

#1 Move your body – Here is a great benchmark challenge.  Try this and write down your results.  As you make loving your body a priority it WILL get stronger day by day!!


#2 Eat your veggies!!

This is a new favorite recipe of mine that I could eat every day!  I always keep baked chicken in my fridge and when I cook it I always cook some veggies to keep on hand as well.  This recipe calls for spaghetti squash that I just split in half, scoop out the seeds, spray with olive oil and roast at 325 for 45 minutes with the chicken.  The broccoli is from a freezer steam fresh bag.  When you have all the food prepped this recipe only takes minutes to throw together!

New favorite product alert!!! I’m not sure how I lived with out this but I’ve added it to eggs, stir-fry,  and even just thrown on plain chicken.  The options are endless and for only 35 calories it adds creamy deliciousness!

Gods “LOVE” never fails……..


Love is patient, love is kind.  It does not envy, it does not boast, it is not proud.  It is not rude, it is not self-seeking, it is not easily angered, it keeps no record of wrongs.  Love does not delight in evil but rejoices with the truth.  It always protects, always trusts, always hopes, always perseveres. Love never fails……”  1 Corinthians 13:4-8

This is one of my favorite bible verses.   I read this and wonder how can I “LOVE” like the GOD above?  I pray that GOD continually shows me how to “Love” my children, my husband, and everyone unconditionally, even myself.  His call to us is that above all we love one another.  “And now these three remain:  faith, hope and love.  But the greatest of these is love.”  1 Corinthians 13:13.

As I started this journey in my life to getting healthy and fit, both spiritually and physically I quickly realized how much of my life I spent not loving the body that God made and created for me.  I based the love for myself on what I saw in the mirror.  Through all of this God has shown me that it’s not about how you look on the outside, but what fills your heart!  When I truly accepted God’s love; my heart was filled with his spirit and everything else fell into place.  He helped me with food.  He helped me want to exercise even when the voice in the back of my head was telling me not too.   It was not until he showed me that when I made him a priority, he helped me accomplish more than I could ever imagined on my own.

As Valentine’s Day fast approaches, I have to share an AMAZING Gluten-Free brownie recipe I recently made for my family!  I found these on one of my favorite websites and I have to say this is the best brownie I have made to date that follows all of my dietary needs.  Everyone loved them and I guarantee they would be a hit to show your family some homemade “LOVE” this weekend!!   Here is a picture of how they turned out!

Fudgy Brownie Recipe (Grain-Free, Paleo)



Preheat oven to 350 ºF and adjust rack to middle position. Butter an 8-inch glass square pan. Place butter and chocolate in the bowl of a double boiler. Melt over low heat. Remove chocolate mixture from heat and whisk in sugar, sea salt, and vanilla extract. Whisk in eggs one at a time. Whisk in tapioca flour and coconut flour. Let batter sit for 5 minutes (this allows the coconut flour to absorb some of the moisture). Pour batter into the buttered baking dish and smooth into an even layer. Bake for 25-30 minutes until edges are just pulling away from the sides and middle is still just a touch moist. Cool and then cut into squares. Store in an airtight container for up to 3 days.

You Can’t Do This Alone!

Have you tried to eat healthy, tried to read your bible, and tried to exercise but have failed?
What is missing? What is the key piece to actually making lasting changes in your life?  Here are my key pieces to the puzzle!

#1 – God – Do you believe?  Do you know God loves you? Do you know He cares about every detail of your life?  He wants us to seek Him and rest in Him “Come to me, all of you who are weary and carry heavy burdens, and I will give you rest.”  Matthew 11:28. This is no joke, He has done it in my life!!  You have to believe, you have to ask Him to take ALL your burdens, and you have to trust Him and He will carry you!

#2 Friends – Ask God to surround you with support!  Friends that can walk this road with you are priceless!  A good friend will encourage you to be healthy and the best version of you, they will inspire you to seek God, and they will help the hard days be better! Becca has been with me since the beginning!  This is Becca, me, and my always skinny sister (no hard feelings, love her to death).  We were in high school here, and the struggle was real!


#3 Determination – without determination you will never succeed.  If you say “maybe” or “a little of this won’t hurt” or “I’ll get to it later” all these wishy washy emotions will cause you to fall!  You have to set your mind that FAILURE is NOT an option.  Satan loves when we say “maybe” because that is weakness.  He loves when we doubt because that is where he can mess us up.


Seek God, pray to be surrounded with great people to encourage you, and move through the day with determination!!!

For the “Love” of Food

I would definitely say that I am a full fledged foodie at heart, always have and always will be. I remember 4 years ago, when I started having health issues, I thought I could never go without gluten, sugar and dairy! It’s crazy how hard it is to have to limit myself, everyone just wants what they want when they want it. I’ve been reading the book of Acts and I look at all of the pain and suffering that Paul endured to spread the good news “that the Messiah would suffer and, as the first to rise from the dead, would proclaim light to his own people and to the Gentiles.” Acts 26:23. Paul had one care and it was to share all that God had done, by sending his only son so we could be saved. His pain and suffering is more than I could ever imagine and definitely makes me realize that my health issues are very trivial in terms of Paul’s life and the pain Jesus endured on the cross so we could be saved.

Having said that I still had to find a healthy way to eliminate these foods from my diet and make it a lifestyle where I did not feel I was missing out all the time. I believe God uses these things in our lives to show us that through him all things are possible and through Christ who strengthens us we can do all things!!

So I quickly developed a passion for taking my favorite foods and making them fit into my new lifestyle. Every week my husband and I find new recipes to try. He is the master chef and I alter the ingredients to make them healthy for our whole family!

I’m going to start with one of my favorite foods, homemade chocolate chip cookies, in particular the “Tollhouse Recipe” on the bag!! I think we finally nailed it this past weekend. Believe it or not we only substituted 3 ingredients, sugar, white flour and chocolate chips with honey, spelt flour and “Enjoy Life” Chocolate Chips.

I tested them out at our Bible Study this past weekend and everyone including the kids kept coming back for seconds. Check out the pictures below and the recipe! Healthy Chocolate Chip Cookies
2 1/4 cups of Spelt Flour
1 teaspoon of baking soda
1 teaspoon of sea salt
1 cup of honey
2 sticks of organic butter
1 teaspoon of vanilla extract
2 large eggs
1 bag of “Enjoy Life Chocolate Chips”
1 cup walnuts
