The fall is absolutely my favorite time of the year! Beautiful Autumn leaves, the best sunrise’s and harvest sunsets that you will see all year long. This past Sunday Shannon and a group of girls that we workout with, met for a 6:30am run!!! My husband actually came too, which was really fun! We met at Peace Valley Park and braved the 29 degree weather for a 10K run! I have to say one of the girls put it best, she said “I could totally feel God’s presence.” She was absolutely right, there is no better time to work out than in the morning before the craziness of the day starts, you can clear your mind, spend time getting closer to God, and enjoy his amazing scenery! Best of all when you are meeting other people, chances are you won’t keep hitting the snooze button and sleep in, which is what I really wanted to do!!

After our run my husband and I went home to enjoy our Family Tradition of pancakes on Sunday’s. Yes every Sunday we make pancakes, healthy and gluten free of course, but they still taste amazing! We made Pumpkin Pecan Pancakes and after a long run they were absolutely delicious!
Pumpkin Pecan Pancakes
1 1/2 C Spelt Flour
1 T Organic Sugar
1/4 t Baking Soda
2 t Baking Powder
1/4 t Salt
1 C Pumpkin Purée
1 t Vanilla
1 1/2 C Unsweetened Vanilla Almond Milk
2 T Melted Butter
Sift all the dry ingredients, add everything else, mix until well blended and then cook them on a griddle, sprayed with Coconut Oil. Sprinkle with toasted pecans and serve!! Make sure to use 100% maple syrup for no added sugar.
