Food For The Body and Soul!

Can you relate?  This past week just ran away from me, it’s actually a blur, I just ran from one activity to the next.  I got my exercise in, I ran, and moved my muscles’ doing some weird new moves at the gym that included using a receiving blanket…lol and I ate some great food.

My chopped salad included spinach, arugula, broccoli, cauliflower, carrots, and hard boiled eggs (minus the yoke) and my favorite Bolthouse Ranch dressing.  I like to chop everything really small and let it sit with the dressing on it (makes it taste like I used a lot more dressing)Winking smile

Mmmmm…mashed cauliflower! I haven’t made this in a while and I forgot how much I enjoy it.  It’s an easy side dish that always leaves me leftovers for the next day.  Just boil a head of cauliflower or cheat and use steam fresh bags like me.  Then put steamed cauliflower, 1 clove of crushed garlic, and 1 Tbl of reduced fat cream cheese in a blender and puree until is creamy and dreamy than salt to your taste.

Are you ready for something a little fancy but super easy? Take arugula, spinach, feta cheese, cooked quinoa (can be cold), and any protein of your choice (I added chicken) toss in a bowl with Trader Joe’s Champagne Vinaigrette and it will knock your socks off!

I also have two amazing marinades for you, one for chicken and one for pork chops (trust me it’s amazing). I will share them with you this week because pictures and editing just aren’t going to happen tonight..sorry!  This blog is for us to share tips, tricks, and inspiration.  Sometimes we will give you tons of blog posts and other times we may be quiet.  Our lives can be insane and we want to keep this fun!  We aren’t writers (forgive us for the many grammatical errors) and we have no desire to make any money from this.  It is purely to share our hearts and our lives as God transforms us inside and out.

God has really been using exercise lately to show me how similar it is to our walk with Him!
