Lets face it, in the cold winter months there are times when I crave good old comfort foods like “Homemade Chicken Noodle Soup.” Many people would also argue that Chicken Noodle Soup has many natural healing properties as well. Being that I follow a gluten-free diet, it was tough to find a soup which truly tasted good- until I found Quinoa Pasta! For those of you who don’t want to lose pasta in your diet, I recommend switching to Quinoa pasta. It’s 20 times better than whole wheat past and is as close to the real deal as you can get, in my opinion. Quinoa itself is one of the healthiest grains and the easiest to digest. It contains more high quality protein than any other grain, it provides all of the essential amino acids in a balanced pattern and its gluten-free. More importantly you don’t feel like you ate a bowl of carbs when you are done. We also add “Kale” to our Chicken Noodle Soup Recipe! So not only are you getting the health benefits of Quinoa you now have one of the healthiest vegetables on the planet in your soup. Kale is packed with antioxidant vitamins A, C and K and sulphur-containing phytonutrients that offer cancer protection, anti-inflammatory properties as well as cholesterol lowering. So take your favorite “Chicken Noodle Soup Recipe” substitute Quinoa Pasta and add Kale at the end for a healthy kick. On a side note my 4 1/2 year old and 1 year old love, love this soup too, so its a great healthy option for the entire family!!
